The Ruffle Cake

Recently I had a small Tupperware Party! Tupperware! I know, how retro of me! I even mocked up these cool retro invites. If only I had gotten around to sending them out instead of just lamely loading it onto Facebook:




Usually the parties I host or plan are massive affairs. I rarely get to do intimate get-togethers. But this party afforded me the opportunity to make one of those ADORABLE little ruffle cakes going around the web/Pinterest. Of course you can make a ruffle cake in any size but something diminutive is always more adorable. Like puppies or kittens. It's a rule.

It was my first time making one and pretty much one of my first times decorating a cake. Well, full disclosure, I "took" a cake decorating class. But I only made it to 1 out of the 4 classes. And that class was pretty much just about how to frost a cake and do little round dollop thingies. I clarify all this just to say, if I can do this cake, anyone can do this cake. I already had the petal tip necessary to do this technique.

...and abracadabra, it was like I was a cake decorating GENIUS. This cake is ridiculously easy. And SO cute.

For the cake, I used a box ginger spice cake in a 6 x 3" spring form pan (Celebrate pan from Michael's). I want to say the mix was Betty Crocker. It wasn't fabulous. But the cream cheese frosting I used was. I would definitely invest in a better mix next time or make one from scratch, but the frosting was pretty much perfection and I highly recommend it.

Super Dooper Awesome Cream Cheese Frostin'
1 stick room temp. butter
1 package room temp. cream cheese
½ bag of powdered sugar
1 teaspoon vanilla
½ teaspoon salt
1 heaping tablespoon meringue powder
dash of freshly grated nutmeg

Whip butter and cream cheese until combined. Add powdered sugar, vanilla and salt, meringue powder, nutmeg, and mix slowly until incorporated. Then turn up that speed until well combined.

The frosting piped and hardened nicely!
